Should you take the most expensive bid or the cheapest from a contractor?
Any bid that is not close to your other bids means that the contractor may be inexperienced, greedy or in the case of very cheep and too hungry for work. if all the bids are close in price then use your instincts and choose the one that seems most honest, and has some high quality jobs you can check out or phone numbers to call.
A bid proposal that is broken down into specific activities and material prices can show that person doing the bid is thinking a lot about the job. If an architect, or designer is not being used then the contractor should provide some sort of plan drawing.
One thing I've noticed is that the best sales person is rarely the best trades, designer, or working person.
